In this video we discuss sharpening single bevel knives. There are many different types of single bevel knives. This technique is a basic technique that can be applied to all of them. There are many more advanced techniques and nuances to be taught in a different video. We use Fujubiki in this video, which is very similar to the yanagiba. We discuss sharpening each side and their differences. Subtleties, like the shape and flatness of your whetstone as well as the angles you will need for sharpening, are discussed and displayed. There is much debate when it comes to the flatness of your stone. Those with advanced technique will use concave stones. We do not delve that deeply into that in this sharpening video.
