This small sponge cake is super easy to make, and one of my favorite things is that you can make the batter the day before, store it in the fridge, and bake in 10 minutes the next morning to have fresh and delicious cakes quick and easy.

24 Madeleines:
120g (1cup) all purpose flour 中筋面粉
2 eggs at room temperature 室温鸡蛋
20g (1.5tbsp) brown sugar 红糖
80g (0.4cup) sugar 糖
113g (0.5cup) melted butter 融化黄油
1 tsp vanilla 香草精
2g (0.5 tsp) baking powder 泡打粉
A pinch of salt 少许盐
