2 tbsp melted butter (28g)
1/3 cup sugar (67g)
1 cup coconut milk (228g)
2 large eggs, room temp
1/2 tsp pandan extract (optional)
1 cup all-purpose flour (120 g)
1/2 cup rice flour (55g)
1/2 cup glutinous rice flour (55g)
2 tsp baking powder
¼ tsp salt
1 salted egg
Banana leaves (cupcake liners work fine)
Extra sugar for topping (about 1/4 tsp each tin)
1 slice American yellow cheese
1/4 cup freshly grated coconut (25g)
