🔸INGREDIENTS for 4 round molds, 10 cm each: 500g all-purpose flour 300g water 10g salt 5g fresh yeast • For the filling: 4 green zucchini 3 beefsteak tomatoes 2 red onions 150g taleggio cheese Olive oil, as needed 1 teaspoon salt ½ teaspoon black pepper 1 tablespoon acacia honey 🔹INSTRUCTIONS: Mix all the ingredients together, adding the salt last. Once you have a smooth ball of dough, let it rise in a bowl covered with plastic wrap for 3 hours, or until it doubles in size. Meanwhile, prepare the filling. Slice the zucchini into rounds, the red onions into wedges, and the tomatoes into slices. In a hot pan, add a drizzle of olive oil and two cloves of garlic in their skins. Add the zucchini to the pan and cook them at high temperature for 5 minutes, stirring frequently until they turn golden. Season with salt and pepper, then remove them from the pan. In the same pan, sauté the onions with a teaspoon of honey and 50g of water. After about 7 minutes, your kitchen will be filled with the aroma of caramelized onions. Set them aside. Season the tomato slices with olive oil, salt, and dried oregano. Once the dough has doubled in size, divide it into 4 equal parts. If you don't have molds, you can simply spread the dough on a baking tray lined with parchment paper. Otherwise, grease the molds with oil and shape the dough into the molds, covering them with plastic wrap. Let them rise for another hour at room temperature. After an hour, flatten the dough and preheat the oven. Poke a few holes on the surface of the focaccia to relieve stress, and sprinkle with salt flakes. Bake in a preheated oven at 210°C for 35 minutes. Once slightly cooled, split the focaccia in half and fill it with zucchini, onions, tomatoes, and plenty of taleggio cheese. Close it and return the focaccia to the oven for another 3 minutes, just enough to melt the cheese and blend all the flavors together. Focaccia is ready.
