The trick in getting the juiciest fried chicken is the marination and then the seasoned flour. The seasoning for the fried chicken is not a big secret any longer!

Recipe :
Crispy Fried Chicken
Preparation Time: 20 minutes + Soaking time
Cooking Time: 20 -25 minutes
Serves: 3-4
Ingredients:
1 kg Chicken
2 cups Butter Milk
1 Cup Flour
Oil to fry
For the Seasoning:
1 tsp Kashmiri Red Chili Powder
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp powdered Sugar
1 tsp Salt
½ tsp Black Pepper Powder
½ tsp White Pepper Powder
1 tsp Thyme
1 tsp Mustard Powder
¼ cup panko Breadcrumbs
Method:
Mix all the ingredients for the seasoning powder.
Add 1 tbsp seasoning powder to the butter milk. Add ½ tsp salt and mix well.
Marinate the chicken pieces in the butter milk for at least 4 hours in the refrigerator.
Add the remaining seasoning and the breadcrumbs to the flour and mix well.
Heat at least 2” oil in a pan.
Remove chicken pieces from the marinade.
Roll in seasoned flour. Dip the chicken pieces again in the butter milk. Roll again in the seasoned flour. Shake the chicken pieces well.
Set aside to rest for 5 minutes.
Fry in medium hot oil, covered, till the chicken is crisp and golden. Remove from oil and serve hot.
