------------------------------------------------------------------------- Have you ever wondered how the land that gave us Ahimsa, Ayurveda and the beautiful song of the Bhagwada Gita became the world’s largest producer of dairy, one of the largest exporters of leather and beef and also, the diabetes capital of the world? Nivi Jaswal presents an evidence-based, anthropological exploration that she embarked upon after healing herself on a whole food plant-based (oil free) approach and having practiced Ketogenic diet for several years – an outcome of her own nutritional rebellion from the mainstream Indian vegetarian paradigm. This is a story of how the Age of Anthropocene has altered not just our environmental biome, our gut microbiome but also seeded ideas into our cultural consciousness that form the foundation of our very identity! This is a story of how forces of colonialism left a legacy in India that continue to reverberate in its food system, health care system and in how it has shaped ancient culinary practices into the modern menus we see in Indian restaurants across India and the world. A connector at heart, Nivi builds strong and passionate teams inspired to deliver socially responsible projects with high community impact.
