Morrocan Coucous Dish ( warm or cold)
1 cup of coucous ( soak and absorb 1.5 cups of boiling water. Cover with plate and let stand for 10 minutes)
1 cup of chickpeas
3/4 cup raisins or chopped dates (use less or completely omit to reduce calorie density)
1 carrot, grated (I used my cheese grater)
2 tsp cumin
1 tsp cinnamon
1 tsp paprika
1/4 tsp ground ginger
1/4 tsp garlic powder
salt and pepper to taste
Mix everything and enjoy warm or chill in fridge and eat later! Delicious!
