Pancit Canton | Stir Fried Noodles with Chicken and Vegetables

Pancit is a Filipino noodle dish; noodles with meat and vegetables. It can be eaten for breakfast, lunch, snack, or dinner. Whenever there are birthday parties or any Filipino parties, pancit is one of the staples. It is a Filipino belief that eating pancit on your birthday will give you longer life.

When I was in 5th grade, I joined a cooking  contest in district level, and this was the dish we had to cook. Out of the 15 contestants, my pancit was ranked 7th place 😊. I didn't win but it was definitely a good experience.

There are so many kinds of pancit and so many ways to make it. Just like Italians have different kinds of pasta and different kinds of sauces.

In this video  I used pancit canton / egg noodle/ flour sticks.  I used chicken, shrimp, and some pork as well. You can add sliced green beans and use nappa cabbage instead of the regular cabbage.

Before eating you can add a little calamansi juice or lemon juice if you want.

Filipinos eat this using a fork, whereas some asians use chopsticks when eating their noodles.

Ingredients

Broth
4 chicken thighs
1/2 piece medium onion
3 cups water

2 tablespoons cooking oil
3/4 cup shrimp
5 cloves garlic
1/2 piece medium onion
1 cup carrots
1 cup snow peas
1/2 cup celery
1 1/2 cups cabbage
1/8 teaspoon black ground pepper
2 1/2 tablespoons soya sauce
1 tablespoon oyster sauce
1 pack magic sarap all purpose seasoning
2 1/2 cups chicken broth
1 pack flour sticks /pancit canton noodles
1/4 cup spring onion and celery leaves
